BINGHAMTON, NY – Another popular berry was the theme again in the latest issue of Nutrition in the Kitchen.

Ann Supa, a nutritionist with Cornell Cooperative Extension, made some delicious blueberry muffins for us.

Supa came up with a simple sour cream and blueberry muffin recipe and replaced fat-free natural green yogurt, skimmed milk, used whole grain flowers and reduced the salt.

These muffins are around 150 calories, the ones you find in stores are close to 500 calories.

Blueberries contain many vitamins and minerals, such as vitamin C, fiber and magnesium.

Supa says this is a fun treat.

“It’s fun to do things with your children, so I encourage you to prepare this recipe with your children. As you say, we didn’t need a stove or anything like that, we didn’t have any sharp knives, so this is a perfect recipe to share with young children and the family, “says Supa.

Supa says there are plenty of you picking blueberries all over Broome County, or you can head to Broome County’s regional farmers market every Saturday to buy them.
